Ever since I went to Trader Joes and tried the Peanut Butter with Chia Seeds, I have developed a new obsession with anything that has these wonderful, nutritious seeds.
With this recipe not only do I receive the antioxidants and high protein of Chia Seeds, but I also get to eat some chocolate!
I recommend eating this pudding after your next long run.
1/2 cup chia seeds, divided
2 cups vanilla soy milk, divided
2 Tablespoons natural peanut butter
1 Tablespoon cocoa powder
- In a small bowl, combine 1 cup soy milk and 2 Tablespoons peanut butter, using a small whisk. It may not combine completely, but mix it the best that you can.
- In another small bowl, combine the remaining soy milk with cocoa powder.
- Once everything has been combined, stir in 1/4 cup of chia seeds into each bowl. Cover, and place in the refrigerator for at least 6 hours (overnight would be best).
- In two small glasses, layer the chocolate and peanut butter chia “pudding.” Top with a small spoonful of peanut butter and either cocoa powder or a few shavings from a dark chocolate bar.
