For me, summertime equals dessert time. But that doesn’t exactly complement my fitness routine. So while searching for a dessert better than ice cream (and better for me!), I discovered these Blueberry Cheesecake Popsicles. And trust me, they didn’t disappoint! Three ingredients, 10 minutes and a popsicle mold is all you need for this healthy dessert. Try it this weekend!
Makes: 6 popsicles
Prep time: 10 mins
Total time: 10 mins + freezing overnight
- 1 pint blueberries
- ½ cup skim milk
- 1½ cup cottage cheese
- Blend all ingredients until smooth.
- Pan spray popsicle molds and divide mixture evenly between six molds.
- Freeze overnight or for about 12 hours.
- Unmold and enjoy!
